Welcome to Holly B —where homemade meals, family traditions, and cozy home inspiration come together.
 HOlly B.

There are dinners that feel like a win… and then there are this kind of dinners.

The kind where everyone goes quiet at the table because they’re too busy eating. The kind where you sit down thinking “this was easy” but it tastes like something you ordered at your favorite restaurant. The kind where cleanup doesn’t make you question your life choices. 😉

This Creamy One-Pot Cajun Chicken & Sausage Pasta checks every box. It’s rich, a little spicy, incredibly comforting, and comes together in just one pot (which, let’s be honest, is half the reason we love it so much).

If your weeknights are anything like mine—busy, full, and slightly chaotic—this is the recipe that saves dinner.

Why You’ll Love This Recipe

  • One pot = less mess, less stress
  • Packed with bold Cajun flavor (but easy to adjust!)
  • Family-friendly comfort food with a little kick
  • Comes together in about 30 minutes
  • Perfect for leftovers (if you even have any 😉)

Ingredients You’ll Need

  • 2 tablespoons olive oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • 8 oz andouille sausage, sliced
  • 1 tablespoon Cajun seasoning (plus more to taste)
  • 1 teaspoon smoked paprika
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz fusilli pasta
  • 1 can (14.5 oz) diced tomatoes, drained
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

How to Make It

  1. Start with the chicken
Heat olive oil in a large pot or deep skillet over medium heat. Add the chicken, season with Cajun seasoning and smoked paprika, and cook for about 5 minutes until browned. Remove and set aside.
  2. Build the flavor
In the same pot, add the sausage and cook for 3–4 minutes until it gets those golden edges. Stir in the garlic and cook for about a minute until fragrant.
  3. Create the sauce
Pour in the chicken broth and heavy cream, scraping up all those flavorful bits from the bottom of the pan (that’s where the magic is). Bring to a gentle simmer.
  4. Cook the pasta
Add the fusilli and drained diced tomatoes. Stir, cover, and let it cook for 12–15 minutes, stirring occasionally, until the pasta is perfectly al dente.
  5. Bring it all together
Return the chicken to the pot and stir in the Parmesan cheese. Let everything simmer together for 3–4 minutes until the sauce thickens and coats every bite.
  6. Finish and serve
Season with salt, pepper, and a little extra Cajun seasoning if you like more heat. Sprinkle with fresh parsley and serve warm.

Tips from My Kitchen 🤍

  • Control the spice: Cajun seasoning can vary—start light and add more at the end if needed
  • Make it extra creamy: Add a splash more cream or a little cream cheese at the end
  • Swap the pasta: Penne or rotini work great if that’s what you have on hand
  • Add veggies: Bell peppers or spinach are delicious stirred in at the end

Make It a Moment

This is one of those meals that just feels like home. Big bowls, everyone gathered around, maybe a loaf of warm bread on the side to soak up that sauce… and suddenly a regular weeknight turns into something a little more special.

And honestly, those are my favorite kinds of dinners.
