Some recipes are more than just food — they’re memories wrapped in the warm, comforting scents of the holidays, passed lovingly from one generation to the next. Growing up, I spent countless hours in the kitchen with my family, mixing cozy spices and rolling out dough for our beloved gingerbread shortbread cookies. The aroma alone felt like a hug — sweet, spiced, and full of nostalgia.

The buttery shortbread practically melts in your mouth, perfectly balanced by warm ginger and cinnamon, then finished with a simple cinnamon-vanilla glaze that makes every bite worth savoring. But what truly made these cookies special was the “stained glass” touch. We’d carefully cut little shapes out of the center of each cookie, turning them into edible works of art — almost too pretty to eat. Almost.

Over the years, these cookies became more than a holiday treat. They became a tradition.

Now, I get to pass that tradition on to my own kids, watching their eyes light up as we roll, cut, and create our own stained-glass masterpieces year after year. These are the moments that remind me the best recipes aren’t just made in the kitchen — they’re made in the heart.

Gingerbread Shortbread Cookies

Ingredients

For the Cookies

  • 2 ¼ cups (280g) all-purpose flour
  • ½ cup (60g) cornstarch
  • ½ teaspoon black pepper
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup salted butter, softened
  • ½ cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons molasses

For the Cinnamon-Vanilla Glaze

  • 1 cup (120g) powdered sugar
  • ½ teaspoon vanilla extract
  • 2 tablespoons heavy cream
  • ¼ teaspoon ground cinnamon

For the Stained Glass Centers

  • ¾ cup granulated sugar
  • ¼ cup colored decorating sugar (red or green work beautifully)
  • ½ cup light corn syrup
  • ¼ cup water
  • ½ teaspoon vanilla extract

Instructions

Step 1: Prepare the Dough

  1. In a medium bowl, whisk together the flour, cornstarch, ginger, cinnamon, nutmeg, and black pepper.
  2. In a large bowl, cream the butter and sugar until light and fluffy. Mix in the vanilla extract and molasses.
  3. Gradually add the dry ingredients to the wet ingredients until a soft dough forms. Divide into two discs, wrap, and refrigerate for at least 1 hour.

Step 2: Bake the Cookies

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Roll dough to about ¼-inch thickness. Cut into festive shapes and cut small shapes from the centers. Bake for 10–12 minutes, just until set. Cool completely.

Step 3: Add the Magic

  1. Whisk together powdered sugar, vanilla, heavy cream, and cinnamon until smooth. Drizzle or spread over cooled cookies.
  2. To make the stained glass, heat granulated sugar, decorating sugar, corn syrup, and water in a saucepan over medium heat until the mixture reaches 290°F (145°C). Carefully spoon the hot mixture into the cut-out centers. Allow to cool completely until hardened.
