One-Pot Creamy Beef Stroganoff

Ingredients

  • 3 cloves garlic, minced
  • 2 Tbsp butter
  • 1 lb. ground beef
  • 8 oz. mushrooms, sliced (I prefer cremini)
  • ½ tsp black pepper
  • 2 cups beef broth
  • 1 Tbsp Worcestershire sauce
  • ½ tsp Dijon mustard
  • 8 oz. wide egg noodles
  • 1¼ cups grated Parmesan cheese
  • ½ cup sour cream
  • 1 Tbsp chopped parsley (optional)

Let’s make it.

  1. Sauté the garlic:
    Melt the butter in a large pot or deep skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  2. Brown the beef:
    Add the ground beef and cook until browned, breaking it up as it cooks.
  3. Add the mushrooms:
    Stir in the sliced mushrooms and black pepper. Sauté about 5 minutes until softened.
  4. Add the noodles + liquids:
    Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Add the uncooked egg noodles and stir. (They won’t be fully submerged—totally fine.)
  5. Simmer:
    Cover with a lid and bring to a boil. Once boiling, stir, reduce heat to low, and simmer 7–10 minutes, stirring occasionally, until noodles are tender and most liquid absorbed.
  6. Make it creamy:
    Remove from heat. Stir in the sour cream and Parmesan until silky and creamy. Taste and season as needed.
  7. Serve:
    Finish with chopped parsley and serve warm!

Tips for Success

  • Don’t skip the Dijon—it gives the stroganoff that signature depth.
  • Use freshly grated Parmesan for the best melt and flavor.
  • If the sauce thickens too quickly, add a splash of broth or warm water.
