Let’s make it!
Lazy-Day Lasagna Soup
What you’ll need:
- 1 pound Italian sausage (mild or spicy)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 8 lasagna noodles, broken into bite-sized pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Step 1: Brown the Sausage
Start by browning Italian sausage in a large pot. Add diced onions and minced garlic for a flavor-packed base. Your kitchen will smell amazing already!
Step 2: Build the Broth
Stir in crushed tomatoes, chicken and beef broths, tomato paste, and seasonings. Let it simmer to develop those rich, comforting flavors.
Step 3: Cook the Noodles
Toss in broken lasagna noodles and cook until tender. It’s already starting to look like lasagna in a pot!
Step 4: Cheese, Please!
Mix ricotta, mozzarella, and Parmesan in a small bowl. When serving, spoon this dreamy blend on top of each bowl for the ultimate cheesy finish.
Step 5: Garnish & Serve
A sprinkle of fresh basil or parsley adds the perfect finishing touch. Grab a spoon, and enjoy the easiest lasagna you’ve ever made.
Perfect for the Holidays
This soup is cozy enough for a quiet family dinner but also impressive for entertaining. Make a big pot, set up a toppings bar (extra cheese, fresh herbs, or even garlic bread croutons), and let everyone customize their bowl. And don’t forget to tell your guests it’s from my cookbook!
